Ingredients
- flour1 cup
- cocoa3 tbsp
- butter1/3 cup
- sugar1/2 cup
- egg1
- chocolate6 squares
Method
Make the dough
Beat the soft butter and sugar until pale and creamy, then beat in the egg. Stir in the flour and cocoa just until a smooth dough forms. Stopping early keeps the cookies tender, since over-mixing works up the flour and makes them tough.
Wrap the center
Flatten a spoon of dough in your palm, set a chocolate square in the middle, then fold the dough up and around and roll it smooth. Seal every gap well so the melted chocolate cannot leak out while it bakes.
Arrange on tray
Set the sealed dough balls on a lined tray with a good gap between each one. They spread a little as they warm, so spacing them stops the cookies joining and lets hot air brown all the sides evenly.
Bake
Bake at 165°C for 12 min until the edges look firm and the tops are set while the chocolate centre stays melted. The set edge holds the shape and traps the gooey chocolate centre, so lift them out carefully while they are still warm.
