Ingredients
- flour1 cup
- cocoa powder1/2 cup
- butter100 g
- sugar3/4 cup
- egg2
- chocolate chips1/4 cup
Method
Melt and mix
Melt the butter, then stir in the cocoa powder and sugar while it is still warm until glossy and smooth. Mixing the cocoa into warm butter blooms it, which gives the brownie a deeper, rounder chocolate taste.
Add egg
Let the mix cool for a minute, then whisk in the eggs one at a time until the batter turns thick and shiny. Adding them one by one keeps the batter smooth and helps build that classic crackly brownie top.
Fold in flour
Fold in the flour and chocolate chips with a light hand, stopping the moment no dry streaks remain. Overmixing makes brownies cakey and dry, so a few gentle folds are what keep them fudgy and moist.
Pour and bake
Pour the batter into a greased small tin that fits your basket. Air fry at 170°C for 20 min until a skewer poked into the middle comes out with a few moist crumbs, not wet batter, which means the centre is just set.
