Ingredients

  • chocolate100 g
  • butter60 g
  • egg2
  • sugar1/4 cup
  • flour2 tbsp

Method

  1. Melt chocolate

Melt the chocolate and butter together until smooth and glossy, stirring often. Use gentle heat so the chocolate does not seize or turn grainy, which would leave the batter dull instead of silky and rich.

  2. Whisk eggs

Whisk the eggs and sugar until pale, light and slightly thick. Beating in air here gives the cake its soft rise and tender crumb, so keep going until the mix falls in a smooth ribbon off the whisk.

  3. Combine

Fold the melted chocolate into the egg mixture, then gently fold in the flour just until it disappears. Folding slowly keeps the air you whisked in, so the outside bakes soft with a gooey molten centre.

  4. Bake in ramekins

Pour into two greased ramekins, filling each about three-quarters full so the batter has room. Air fry at 180°C for 14 min until the tops are set but the centres still wobble slightly and a skewer near the edge comes out with a few moist crumbs.
