Ingredients
- Bread flour2 cups
- Instant yeast1 tsp
- Milk, warm1/2 cup
- Brown sugar1/3 cup
- Ground cinnamon1.5 tsp
- Cream cheese1/4 cup
- Egg1
- Butter2 tbsp, softened
- Icing sugar3 tbsp
Method
Make the dough
Mix the flour, yeast, warm milk, an egg and a little softened butter into a soft dough. Knead for 8 minutes until smooth and springy, then cover and let it rise until doubled. A good knead builds the stretch that makes the rolls fluffy.
Roll and fill
Roll the risen dough into a large rectangle on a floured surface. Brush with soft butter and scatter the brown sugar and cinnamon right to the edges. Even coverage means every swirl carries the same sweet spice.
Cut the swirls
Roll the dough up tightly from the long side into a log, then slice into even rounds with a sharp knife or a length of thread. Thread cuts clean spirals without squashing the soft dough flat.
Second rise
Arrange the rolls in a lined tin that fits your basket, leaving room to expand. Cover and let them puff up for 20 minutes until soft and touching. This second rise is what makes them light.
Air-fry and ice
Air-fry at 165°C for 14 min until golden and cooked through in the centre. Beat the cream cheese with icing sugar and a splash of milk, then drizzle over the warm rolls so it melts into the swirls.
