Ingredients
- Ripe bananas2 mashed
- All-purpose flour1 cup
- Brown sugar1/3 cup
- Chopped walnuts1/4 cup
- Egg1
- Baking powder1 tsp
Method
Mash the bananas
Mash the ripe bananas in a bowl until only a few small lumps are left. The riper and more spotted the fruit, the sweeter and more fragrant the bites, so pick the softest bananas you have.
Combine wet ingredients
Whisk the egg and brown sugar into the banana until the mix turns glossy and a little paler. Beating some air in at this stage keeps the finished bites light and tender rather than heavy and dense.
Fold in the dry mix
Sift the flour and baking powder over the bowl, then fold gently just until combined. Stop the moment the flour streaks vanish, because over-mixing works the flour and makes the crumb tough.
Fill the moulds
Spoon the batter into silicone mini-muffin cups, filling each about two-thirds full, and scatter the chopped walnuts on top. Leaving that headroom lets the bites dome up neatly instead of spilling over.
Air-fry until set
Air-fry at 160C for 12 min until risen and golden and a skewer pushed into the centre comes out clean. Let them cool for five minutes in the moulds so they firm up before you lift them out.
