Ingredients
- cream cheese200 g
- sugar1/3 cup
- egg1
- biscuits6, crushed
- butter40 g, melted
Method
Make the base
Mix the crushed biscuits with the melted butter until it looks like damp sand, then press firmly into the bottom of small cups. Pressing hard packs the crumbs so the base holds together and does not crumble.
Make the filling
Beat the cream cheese and sugar until completely smooth, then mix in the egg. Add the egg last and stir only until it disappears, since over-beating whips in air that can crack the tops.
Fill the cups
Pour the filling over the biscuit base in each cup, filling them about three-quarters full. Leaving a little headroom stops them overflowing as they puff gently in the heat.
Bake
Air-fry at 150°C for 15 min until the edges are set but the centre still has a slight wobble. That soft centre firms as it cools, so chill them well before serving for a clean, creamy slice.
