Ingredients
- All-purpose flour1 cup
- Softened butter60 g
- Brown sugar1/2 cup
- Egg1
- Dark chocolate chips1/2 cup
- Vanilla extract1 tsp
Method
Cream the base
Beat the soft butter and brown sugar together until pale and fluffy. This traps air that gives the cookies a tender lift, so keep beating for a couple of minutes and do not rush it.
Bind it
Whisk in the egg and vanilla until the mix looks glossy and smooth. Add the egg at room temperature so it blends in easily and pulls the batter into a soft, even cream.
Fold the dry
Sift in the flour with a pinch of salt and fold gently until only just combined. Stir the chocolate chips through, keeping a few back to press on top, and stop mixing early so they stay soft.
Shape and chill
Roll walnut-sized balls, flatten them a little on a lined tray and space them apart to spread. Chill the dough for 10 minutes first, as cold dough holds its shape and stops the cookies spreading too thin.
Air-fry
Air-fry at 160C for 12 min until the edges are golden and the centres still look soft. Let them rest on the tray for five minutes to firm up, which sets the middle as they cool.
