Ingredients
- Dark chocolate100 g
- Butter1/2 cup
- Eggs2
- Powdered sugar1/3 cup
- All-purpose flour1/4 cup
- Cocoa powder1 tbsp
Method
Melt chocolate and butter
Gently melt the dark chocolate with the butter until glossy and smooth, then let it cool slightly. Letting it cool stops the eggs from scrambling when you combine everything.
Whisk the eggs and sugar
Beat the eggs with the powdered sugar until thick and pale. This light, airy base gives the cakes a tender crumb around that molten core.
Fold in dry ingredients
Stir the melted chocolate into the egg mixture, then fold in the flour and cocoa just until combined. Overmixing develops gluten and ruins the soft texture.
Fill greased cups
Grease and lightly dust ramekins with cocoa, then fill each about three-quarters full. The greasing and dusting let the cakes slip out cleanly when inverted.
Air-fry for the molten centre
Air-fry at 180C for 10 minutes until the edges are set but the middle still jiggles slightly. Pull them the moment the tops look firm; the residual heat keeps the centre flowing and fudgy.
