Ingredients
- Puff pastry sheet1
- Cream cheese1/3 cup
- Raspberry jam1/4 cup
- Icing sugar2 tbsp
- Egg wash1 egg
Method
Cut pastry squares
Slice the puff pastry into squares about six centimetres across. Score a smaller square inside each without cutting all the way through, so the middle stays low and the border can rise into a neat frame around the filling.
Whip the filling
Beat the cream cheese with the icing sugar until smooth and easy to spread. A little sweetness in the cheese balances the sharp raspberry jam, so no single bite tastes too tangy or too flat.
Fill the centres
Spoon a small dab of the cream cheese into the scored middle of each square, then add a teaspoon of jam on top. Keep the filling inside the border so it does not spill out and burn onto the basket.
Egg-wash the edges
Brush only the raised borders with the egg wash, keeping it off the filling. The egg is what turns the pastry a glossy golden brown, while the clean centre stays bright and moist.
Air-fry until golden
Air-fry at 175C for 11 min until the borders puff up high and turn deep golden brown, a sign the pastry is baked through. Let them cool a little, then dust with icing sugar before serving.
