Ingredients
- Dark chocolate100 g
- Butter1/4 cup
- Sugar1/2 cup
- Egg1
- All-purpose flour1/3 cup
- Cocoa powder1 tbsp
Method
Melt chocolate and butter
Gently melt the dark chocolate with the butter over a bowl of warm water until glossy and smooth. Keep stirring so the chocolate warms evenly and never scorches or turns grainy at the edges.
Whisk in sugar and egg
Off the heat, beat in the sugar, then the egg, until the mix turns thick and shiny. This steady beating dissolves the sugar and is what gives brownies their signature crackly, papery top.
Fold in the dry
Sift the flour and cocoa over the batter and fold just until they disappear. Stop the moment it looks even, because extra mixing builds structure and makes the bites cakey rather than dense and fudgy.
Fill the moulds
Spoon the batter into small greased silicone moulds, filling each almost to the rim. Smooth the tops with the back of the spoon so they bake into neat, even little squares.
Air-fry the brownie bites
Set the moulds in a preheated basket and air-fry at 170C for 14 min until the tops are set but the centres still look a touch soft. Cool them ten minutes so the middles firm up into a fudgy bite.
