Ingredients

  • Dark chocolate120 g
  • Butter1/3 cup
  • Eggs2
  • Powdered sugar1/3 cup
  • All-purpose flour1/4 cup

Method

  1. Melt the base

Melt the chocolate and butter together until smooth, then set it aside to cool slightly. It should feel just warm, not hot, so the eggs blend in later without scrambling or setting on contact.

  2. Beat eggs and sugar

In a separate bowl, whisk the eggs and powdered sugar until thick and pale. Beating in air here builds the delicate walls that stay set around the soft molten centre as the cake bakes.

  3. Combine and flour

Fold the warm chocolate into the egg mix, then sift in the flour and fold gently. Stop the moment the batter looks even, as overmixing firms it up and you would lose the runny middle.

  4. Fill greased ramekins

Butter two ramekins and dust them lightly with flour, tapping out the extra. This thin coat stops the cakes sticking so they slide out cleanly when you turn them over onto a plate.

  5. Air-fry the lava cakes

Set the ramekins in a preheated basket and air-fry at 200C for 11 min until the edges are firm but the centre still jiggles. Turn out onto a plate and serve right away so the middle flows out warm.
