Ingredients
- Plain flour2 cups
- Instant yeast1 tsp
- Milk, warm1/2 cup
- Sugar2 tbsp
- Egg1
- Icing sugar1/2 cup
Method
Activate the dough
Whisk the warm milk, sugar and yeast together and rest until foamy, which shows the yeast is alive. Mix in the egg, flour and a pinch of salt to a soft sticky dough, then knead briefly until smooth.
Let it rise
Cover the bowl and leave the dough in a warm spot until doubled in size, about an hour. This slow rise builds the bubbles that give beignets their hollow, airy inside rather than a heavy crumb.
Roll and cut
Roll the dough out on a floured surface to about a quarter inch thick. Cut it into neat two inch squares with a sharp knife or pizza wheel, so they puff evenly and pull apart into soft pillows.
Brush and arrange
Brush each square lightly with melted butter so they crisp and colour evenly. Lay them spaced well apart in the basket, since they swell as they cook and would fuse together if crowded.
Air-fry and dust
Air-fry at 180°C for 8 min until puffed, golden on both sides and cooked through the middle, flipping halfway. While still warm, dredge them heavily in icing sugar until completely coated.
