Ingredients
- Dark chocolate100 g
- Butter1/2 cup
- Sugar3/4 cup
- Eggs2
- Plain flour1/2 cup
- Cocoa powder2 tbsp
Method
Melt the chocolate
Melt the dark chocolate with the butter over a pan of barely simmering water, stirring until smooth and glossy. Let it cool for a few minutes so it does not cook the eggs.
Whisk eggs and sugar
Whisk the eggs and sugar together for two minutes until thick and pale. This is what creates the signature shiny crackled top on the brownies.
Combine the batter
Fold the cooled chocolate into the egg mixture, then sift in the flour and cocoa. Stir gently just until combined to keep the texture dense and fudgy.
Fill the moulds
Spoon the batter into small silicone cups or a lined mini tin, filling each about three-quarters full. Tap them on the counter to release any large air bubbles.
Air-fry the bites
Place the moulds in the basket with space around them and air-fry at 160C for 12 minutes until the tops are set but a skewer comes out slightly fudgy. Cool fully before lifting them out.
