Ingredients
- Ripe bananas2, mashed
- Flour1 cup
- Brown sugar1/3 cup
- Egg1
- Cinnamon1 tsp
- Baking soda1/2 tsp
Method
Make the batter
Mash the bananas smooth, then whisk in the egg and brown sugar until glossy. Fold in the flour, cinnamon and baking soda just until no dry streaks show. Stopping there keeps the bites soft, as overmixing turns them rubbery.
Portion into cups
Spoon the batter into greased mini silicone moulds, filling each about two-thirds full. The small size bakes through fast and gives plenty of golden edge, while overfilling would make them spill and dome over.
Tap out air
Gently tap the filled moulds on the counter to knock out big air bubbles for an even crumb. Let them rest a couple of minutes while the air fryer heats, so they start cooking as soon as they go in.
Air-fry until done
Cook at 165°C for 14 min until the tops are domed and springy and a skewer comes out clean. Cool for a few minutes before unmoulding, as the egg-rich crumb firms as it cools and would tear if turned out hot.
