Ingredients
- Plain flour1 cup
- Butter3 tbsp
- Eggs2
- Caster sugar1/3 cup
- Ground cinnamon1 tsp
Method
Cook the dough base
Bring 1 cup water with the butter and a pinch of salt to a gentle boil in a saucepan. Tip in the flour all at once and stir hard with a wooden spoon until the mixture pulls away from the sides into a smooth ball, then cool for five minutes.
Beat in the eggs
Add the eggs one at a time, beating vigorously after each until the dough turns glossy and thick. The paste should ribbon slowly off the spoon and hold a soft peak.
Pipe the ridges
Spoon the dough into a piping bag fitted with a large star nozzle. Pipe four to five inch lengths onto a lined tray, snipping the ends with scissors, then chill them for ten minutes to hold their shape.
Mix the coating
Stir the caster sugar and cinnamon together in a wide shallow bowl. Keep it ready beside the air fryer so the churros can be tossed while still hot.
Air-fry until golden
Lightly brush the churros with oil and arrange in a single layer with space between each. Air-fry at 190C for 12 minutes until deep golden and crisp, then immediately roll in the cinnamon sugar.
