Ingredients
- Water1 cup
- Butter4 tbsp
- Plain flour1 cup
- Eggs2
- Cinnamon sugar1/2 cup
- Vanilla1 tsp
Method
Make the dough
Bring water and butter to a gentle boil, then dump in the flour all at once and stir hard until a smooth ball forms and pulls from the pan. Let it cool for a few minutes so the eggs don't scramble when added.
Beat in the eggs
Add the eggs one at a time along with the vanilla, beating vigorously until the dough turns glossy and pipeable. It should hold a ribbon shape without running off the spoon.
Pipe the sticks
Spoon the dough into a piping bag fitted with a star tip and pipe ridged lengths straight onto a lined tray. The ridges aren't just pretty; they create extra crispy edges as they cook.
Chill briefly
Pop the piped churros in the freezer for about 10 minutes to firm up so they keep their shape in the hot air. Lightly mist them with oil right before cooking.
Air-fry and coat
Cook at 180C for 10 minutes until puffed and golden, then immediately roll the hot churros in cinnamon sugar so it clings.
