Ingredients

  • Paneer cubes250 g
  • Bell peppers1 cup mixed
  • Onion petals1 cup
  • Hung curd1/2 cup
  • Tandoori masala2 tsp
  • Mustard oil1.5 tbsp

Method

  1. Cut matching pieces

Cube the paneer and cut the peppers and onion into petals roughly the same size as the paneer. Even pieces thread neatly and cook at the same speed, so nothing burns while the rest is still raw.

  2. Whisk a thick marinade

Beat the hung curd with the tandoori masala, salt and mustard oil until it is thick enough to cling. A runny marinade slides off the paneer, so keep it on the heavier side for a coat that stays put.

  3. Coat and rest gently

Fold the paneer and vegetables through the marinade with a light hand so the paneer does not crumble. Rest for 15 minutes to let the spice settle in and the flavour reach past the surface.

  4. Thread the skewers

Alternate paneer, pepper and onion on soaked skewers, leaving small gaps between each piece. The gaps let hot air reach every face and char it, instead of colouring only the ends.

  5. Air-fry till charred

Air-fry at 195C for 14 min, rotating the skewers once midway. They are ready when the paneer edges brown and the peppers blister with smoky spots. Rotating keeps the colour even all round.
