Ingredients
- Mashed potato2 cups
- Mozzarella cubes12 small
- Breadcrumbs1 cup
- Cornstarch slurry3 tbsp
- Black pepper1/2 tsp
- Saltto taste
Method
Season the mash
Mix the cooled mashed potato with salt and black pepper until well seasoned and firm enough to shape. If it feels wet, stir in a spoon of breadcrumbs to tighten it.
Stuff with cheese
Take a portion of mash, flatten it in your palm, and press a mozzarella cube into the center. Seal the potato around it and roll into a smooth log, making sure no cheese peeks out.
Double coat
Dip each log into the cornstarch slurry, then roll it thoroughly in breadcrumbs. A complete, even crumb layer is what gives the crisp golden shell.
Chill to set
Rest the coated croquettes in the fridge for fifteen minutes so they hold their shape during cooking. A light spritz of oil before frying boosts the crunch.
Air-fry until crisp
Air-fry at 190C for 14 minutes, turning once halfway, until the crust is deep golden all over. Let them sit one minute before biting so the molten cheese settles slightly.
