Ingredients
- broccoli1 cup, florets
- baby corn1 cup, halved
- bell pepper1 cup, cubed
- zucchini1 cup, sliced
- olive oil1 tbsp
- saltto taste
- black pepper0.5 tsp
Method
Prep the vegetables
Wash and cut the broccoli, baby corn, bell pepper, and zucchini into bite-sized pieces. Try to keep them a similar size so they all reach tender at the same time instead of some staying raw.
Season the vegetables
Toss all the vegetables with the olive oil, salt, and black pepper in a bowl. Coating them in a thin film of oil helps the heat brown the edges and stops them drying out in the basket.
Arrange in the basket
Spread the vegetables in a single layer in the basket. Give them room rather than heaping them up, because a crowded basket traps steam and leaves them soft instead of lightly charred.
First fry
Air-fry at 190°C for 8 min, then pull out the basket and give it a good shake. Shaking tosses the pieces so a new side faces the heat and they colour evenly all over.
Finish cooking
Air-fry at 190°C for 7 min until the vegetables are tender and lightly charred at the edges. The zucchini and peppers should look glossy and just softened, not collapsed and mushy.
