Ingredients

  • spring roll sheets10
  • cabbage1 cup, shredded
  • carrot0.5 cup, grated
  • spring onion0.25 cup, chopped
  • soy sauce1 tsp

Method

  1. Make the filling

Toss the shredded cabbage, grated carrot and chopped spring onion with the soy sauce in a bowl. Keep the filling on the drier side and don't let it sit too long, since a wet filling steams the wrappers and stops them crisping.

  2. Roll the spring rolls

Place a line of filling on each sheet and roll it up tightly, tucking the sides in and sealing the final edge with a dab of water. A firm, snug roll holds its shape and crisps evenly instead of unravelling in the basket.

  3. Arrange in the basket

Lay the rolls in a single layer in the basket with a little space between each one. Crowding traps steam and leaves soft spots, so the gaps let the hot air reach every side and crisp the wrappers all round.

  4. Spray with oil

Lightly spray the rolls with oil on all sides, including the seams. This thin film of oil is what turns the wrappers glassy and golden; without it they stay pale and chewy in patches instead of crisping.

  5. Air fry

Air fry at 190°C for 12 min, turning the rolls once halfway through. They are ready when the wrappers are crisp and golden brown all over; the turn makes sure both sides colour evenly and stay crunchy.
