Ingredients

  • Tortilla chips2 cups
  • Boiled rajma/beans1/2 cup
  • Cheddar, grated1 cup
  • Jalapenos, sliced2 tbsp
  • Salsa1/4 cup
  • Spring onion2 tbsp

Method

  1. Build a tight base

Line an oven-safe dish that fits your basket with a single, slightly overlapping layer of tortilla chips. A tight, even base holds all the toppings in place, so nothing slides off or tumbles down into the basket below.

  2. Spoon on beans

Dot lightly mashed rajma or beans across the chips so most scoops get a savoury bite. Keep each spoonful small, because piling on too much wet bean weighs the chips down and softens their crunch.

  3. Cover with cheese

Blanket the whole dish with grated cheddar and tuck the jalapeno slices in among the chips. As it melts the cheese works like glue, binding the loose chips and toppings into one shareable, holdable pile.

  4. Air-fry to melt

Air-fry at 180°C for 6 min, until the cheese is fully molten and the chip edges darken a shade. Finish with cold spoonfuls of salsa and a scatter of spring onion just before serving, so they stay fresh against the warm chips.
