Ingredients

  • corn1 cup, boiled
  • mayonnaise2 tbsp
  • cheese0.5 cup, grated
  • mini tart shells8
  • black pepper0.5 tsp

Method

  1. Make the filling

Mix the boiled corn kernels, mayonnaise, half the grated cheese, and black pepper in a bowl. Drain the corn well first, as any extra water would make the tart shells go soft instead of crisp.

  2. Fill the cups

Spoon the corn mix into the mini tart shells, dividing it evenly between them. Do not overfill, or the filling will spill over the rims and stop the edges from crisping cleanly.

  3. Top with cheese

Sprinkle the rest of the grated cheese over the top of each cup. This cheese layer melts into a golden lid that seals in the filling and gives every cup a nicely browned finish.

  4. Arrange in the basket

Place the filled cups in a single layer in the basket, keeping a little space around each. Spacing them out lets the hot air reach every side so the shells crisp all the way round.

  5. Air fry

Air-fry at 180°C for 6 min until the cheese melts and the tart edges turn light golden. Lift them out gently, as the shells are delicate and warm straight from the basket.
