Ingredients
- Large jalapenos or bhavnagri chillies8
- Cream cheese100 g
- Grated processed cheese1/3 cup
- Breadcrumbs1/2 cup
- Plain flour slurry3 tbsp
- Garlic powder1/2 tsp
Method
Prep the chillies
Slit each chilli lengthwise on one side and gently scoop out the seeds and white membrane with a small spoon. Wearing gloves here keeps your fingers from stinging later.
Mix the filling
Beat the cream cheese with the grated cheese and garlic powder until smooth and spoonable. Pipe or stuff it firmly into each chilli, pressing the slit edges to seal.
Coat in crumb
Dip each stuffed chilli into the flour slurry, then roll thoroughly in breadcrumbs so the whole surface is covered. A second crumb coat gives an extra-sturdy crunch.
Rest and chill
Refrigerate the coated poppers for 10 minutes so the filling firms up and stays inside during cooking. This prevents the cheese from leaking out too early.
Air-fry till golden
Arrange the poppers in a single layer and air-fry at 190C for 10 minutes, until the crumb is deep golden and the cheese peeks out softly. Cool for two minutes before biting to avoid a molten surprise.
