Ingredients
- paneer200 g, cubed
- capsicum1 cup, cubed
- onion1 cup, cubed
- yogurt2 tbsp
- tandoori masala1 tbsp
Method
Marinate the paneer
Mix the yogurt and tandoori masala into a smooth paste, then fold the paneer cubes, capsicum and onion through until every piece is coated. Yogurt clings to the paneer and helps the masala stick and colour it.
Rest the mix
Let the coated mix sit for 10 min so the masala soaks into the paneer and vegetables. Even a short rest lets the yogurt work into the surface, giving a deeper flavour than coating and cooking at once.
Thread the skewers
Thread the paneer, capsicum and onion alternately onto small skewers, leaving a little gap between pieces. Small gaps let hot air flow around each piece so it chars instead of steaming its neighbour.
Arrange in the basket
Lay the skewers flat in a single layer in the basket without stacking them. Keeping them in one layer means every skewer gets direct heat, so they colour evenly rather than staying pale on top.
Air fry
Air fry at 190°C for 10 min, turning once, until the paneer edges turn light golden and the vegetables soften. Do not overcook, as paneer left too long in dry heat can go firm and rubbery.
