Ingredients
- Grated paneer1 cup
- Boiled peas, mashed1/3 cup
- Ginger-green chilli paste1 tsp
- Garam masala1/2 tsp
- Breadcrumbs1/2 cup
- Cornflour slurry3 tbsp
Method
Mix the filling
Combine the grated paneer with the mashed peas, ginger-green chilli paste, garam masala and salt. Knead it gently for a minute until it comes together into a smooth dough that presses easily and holds without cracking.
Shape small bites
Pinch off portions and press them into thick little discs about the size of a coin. Keeping the bites small gives a quick, even cook and more crisp surface for their size, so every bite has a good crunch.
Double coat
Dip each disc in the cornflour slurry, then press it firmly into breadcrumbs on both sides. The crumb layer crisps in the hot air into a golden shell that also protects the soft paneer centre from drying out.
Air-fry to crisp
Mist the bites with oil and air-fry at 190°C for 12 min, flipping them halfway, until evenly golden and crunchy. Serve them hot with mint chutney while the crust is at its crispest, before it starts to soften.
