Ingredients
- Spring roll wrappers10 sheets
- Shredded cabbage2 cups
- Julienned carrot1 cup
- Soy sauce1 tbsp
- Garlic, minced4 cloves
- Oil for brushing2 tbsp
- Plain flour1 tbsp, for sealing
Method
Wilt the filling
Heat a teaspoon of oil and toss the garlic, cabbage and carrot over high heat for two minutes. Splash in the soy sauce and cook until the vegetables soften but still hold a slight bite. Spread the mix on a plate so it cools and any extra moisture escapes.
Roll tightly
Lay a wrapper as a diamond, spoon a slim line of filling near the bottom corner, then fold up and tuck the sides in. Roll snugly and seal the final edge with a smear of flour-water paste so it does not unravel.
Oil the parcels
Brush each roll on all sides with a thin film of oil, which is what gives the air fryer its deep-fried crackle. Arrange them seam-side down so they hold their shape during cooking.
Air-fry until golden
Place the rolls in a single layer with space between each one and air-fry at 190C for 12 minutes, turning once at the halfway mark. They are ready when the wrappers blister into a pale gold and sound hollow when tapped.
