Ingredients
- Paneer (large cubes)300 g
- Peri-peri masala2 tbsp
- Hung curd3 tbsp
- Lemon juice1 tbsp
- Bell peppers (chunks)1 cup
- Olive oil1 tbsp
Method
Whisk the marinade
Stir peri-peri masala, hung curd, lemon juice, olive oil and a pinch of salt into a thick rust-red paste. Taste and adjust the heat so it is punchy but not overpowering.
Coat paneer and peppers
Fold paneer cubes and bell-pepper chunks through the marinade until evenly glazed. Rest fifteen minutes so the smoky tang penetrates the paneer.
Thread the skewers
Alternate paneer and peppers on soaked wooden or metal skewers, leaving small gaps for the heat to reach all sides. Short skewers fit the basket without crowding.
Preheat and arrange
Preheat the air fryer and lay the skewers across the basket so they sit raised off the base. Brush any leftover marinade over the top for deeper colour.
Air-fry to a char
Air-fry at 200C for 12 minutes, turning the skewers once, until the edges are blistered and lightly charred. Finish with a squeeze of lemon and a dusting of extra peri-peri.
