Ingredients
- Mozzarella block200 g
- Breadcrumbs3/4 cup
- Plain flour1/3 cup
- Beaten egg or milk slurry2
- Dried oregano1 tsp
- Chilli flakes1/2 tsp
Method
Cut and coat
Slice the mozzarella into finger-thick batons and roll each in flour. Dip in the beaten egg or milk slurry, then press into the breadcrumbs mixed with oregano and chilli flakes until fully covered.
Double dip
Coat every stick a second time in egg and crumbs to build a thick, leak-proof shell. This double layer is the single most important trick for keeping the melting cheese sealed inside.
Freeze hard
Lay the coated sticks on a tray and freeze them for 20 min until rock solid. Frozen sticks crisp on the outside before the cheese has a chance to melt and ooze out into the basket.
Air-fry to gold
Lightly spray the sticks with oil and air-fry at 200°C for 6 min, turning once halfway, until the crust is golden, crisp and set and the sticks just bulge. Serve at once while the pull is at its best.
