Ingredients
- Firm tofu, pressed and cubed400 g
- Peri-peri seasoning2 tsp
- Lemon juice1 tbsp
- Garlic, minced3 cloves
- Cornflour2 tbsp
- Olive oil1 tbsp
Method
Press and cube
Press the tofu hard to remove the water, then cut into cubes or thick batons. Dry tofu lets the tangy spice rub stick to the surface instead of sliding off in the heat, so the flavour stays put.
Make the rub
Stir the peri-peri seasoning, minced garlic, lemon juice and olive oil into a loose paste. The lemon sharpens the chilli while the oil helps it cling to the tofu and carries the spice into the crust.
Coat thoroughly
Rub the paste over every cube, then dust lightly with cornflour for extra crunch. Let the tofu marinate for 10 minutes so the flavours soak in and the surface dries enough to crisp.
Air-fry to crimson crisp
Spread the tofu in a single layer and air-fry at 200C for 16 min, shaking halfway. Cook until the surface is deep red, blistered and crisp at the edges. Shaking turns every side to the heat.
