Ingredients
- Firm tofu400 g
- Peanut butter3 tbsp
- Soy sauce2 tbsp
- Maple syrup1 tbsp
- Lime juice1 tbsp
- Red chili flakes0.5 tsp
Method
Press the tofu
Wrap the tofu block in a towel and weigh it down for fifteen minutes to expel excess water. Drier tofu drinks up the peanut marinade and crisps instead of steaming. Cut it into thick bite-sized cubes.
Whisk the satay sauce
Blend peanut butter, soy sauce, maple syrup, lime juice, and chili flakes with a splash of warm water until pourable. The sauce should ribbon off the spoon, not clump. Reserve a few spoons for dipping later.
Marinate the cubes
Coat the tofu in most of the peanut sauce and let it soak for fifteen minutes. Turn the cubes once so all sides absorb the flavor. Thread onto soaked skewers if your basket allows, or cook loose.
Air-fry until caramelized
Arrange the tofu in a single layer and cook at 200C for 14 minutes, turning halfway through. The marinade should darken into sticky, browned edges. Brush with reserved sauce and serve with lime wedges.
