Ingredients
- Potatoes, cubed4 medium
- Cornflour2 tbsp
- Schezwan sauce3 tbsp
- Garlic, minced4 cloves
- Spring onion1/4 cup
- Oil1 tbsp
Method
Parboil the cubes
Boil the potato cubes for 5 minutes until just tender at the edges but still firm in the centre, then drain well and let them steam-dry. The roughed-up, dry surface is what crackles into maximum crunch in the basket.
Dust and oil
Toss the dry cubes with cornflour, oil and salt until they wear a fine, even, pale film. The starch clinging to that rough surface is exactly what crisps and crackles once the hot air hits it.
First crisp
Air fry the cubes at 200°C for 14 minutes, shaking twice, until they are deep gold and crisp all over. They should feel light and rattle in the basket when shaken, a good sign the outside has dried and set.
Coat and finish in the air fryer
Toss the crisp potatoes with the schezwan sauce, garlic and spring onion, then air fry at 200°C for 4 min. The quick blast caramelises the glaze onto the cubes, leaving a sticky, fiery shell that still crunches.
