Ingredients
- Young green jackfruit2 cans, drained
- Breadcrumbs1 cup
- Ground flax2 tbsp
- Onion powder1 tsp
- Cornstarch3 tbsp
Method
Shred and squeeze
Pull the drained jackfruit apart with two forks until it resembles stringy meat, then press hard in a sieve to wring out the brine. Wet jackfruit will never hold a nugget shape. Aim for a fluffy, almost dry pile.
Bind the mixture
Mix ground flax with three tablespoons of water and let it gel for five minutes into a sticky egg substitute. Fold this into the jackfruit with the cornstarch and onion powder until a moldable mass forms. Squeeze a handful to check it holds together.
Shape and bread
Press the mixture into small flat nuggets about the size of a walnut, packing them tightly so they don't crumble. Roll each one in breadcrumbs, pressing the crumbs in firmly. A snug crust gives that satisfying bite.
Chill briefly
Rest the breaded nuggets in the fridge for ten minutes so they firm up before cooking. Cold nuggets keep their shape under the hot circulating air. Mist them lightly with oil for even browning.
Air-fry until golden
Arrange the nuggets in a single layer and cook at 190C for 14 minutes, flipping at the halfway mark. They should turn deep gold and sound hollow when tapped. Let them sit two minutes before serving so the centers set.
