Ingredients
- Firm tofu, pressed and cubed400 g
- Cornflour3 tbsp
- Honey2 tbsp
- Soy sauce1.5 tbsp
- Toasted sesame seeds2 tbsp
- Rice vinegar1 tsp
Method
Press and dredge
Press the cubed tofu under a weighted plate for about ten minutes to squeeze out water, then toss the pieces in cornflour until each one wears a dry, even coat. This starch shell is what crisps into a crackly golden surface instead of turning soft.
Whisk the glaze
Stir the honey, soy sauce and rice vinegar together in a small bowl until smooth and glossy. The splash of rice vinegar cuts through the honey so the finished glaze tastes bright and balanced rather than one-note sweet.
First air-fry
Air-fry the dredged tofu on its own at 195°C for ten minutes, shaking the basket once, until the cubes are golden and firm to the touch. Building a crisp base layer first keeps them from going limp once the sticky glaze goes on.
Glaze and finish
Toss the hot tofu through the honey-sesame glaze and the toasted sesame seeds until every cube is glossy, then return them to the basket. Air-fry at 195°C for 6 min until the glaze turns sticky and lacquered and clings to each piece.
