Ingredients
- Paneer cubes250 g
- Peri-peri seasoning2 tbsp
- Lemon juice1 tbsp
- Garlic paste1 tsp
- Olive oil1 tbsp
- Smoked paprika1 tsp
Method
Whisk the marinade
In a wide bowl, stir together the peri-peri seasoning, smoked paprika, garlic paste, lemon juice and olive oil into a loose paste. Taste and add a pinch of salt only if your seasoning blend is unsalted, since most peri-peri mixes already carry plenty.
Coat the paneer
Gently fold the paneer cubes through the marinade with your fingers so every face gets a thin, even film. Let them sit for at least 15 minutes so the lemon and garlic start working into the surface.
Preheat and arrange
Preheat the air fryer while the paneer rests so the basket is hot when the cubes go in. Lay the cubes in a single layer with small gaps so the hot air can crisp every side rather than steam them.
Air-fry until edged with char
Air-fry at 200C for 12 minutes, pausing at the halfway mark to shake the basket so all faces colour evenly. Pull them when the edges are deeply golden with a few blackened tips, then finish with an extra squeeze of lemon.
