Ingredients

  • Grated paneer1.5 cups
  • Cornflour3 tbsp
  • Garam masala1 tsp
  • Grated ginger1 tsp
  • Chopped coriander3 tbsp
  • Saltto taste

Method

  1. Knead the paneer

Knead the grated paneer with the heel of your palm until it turns soft and dough-like with no grainy bits left. Well-kneaded paneer is the secret to koftas that stay tender rather than dry and crumbly.

  2. Mix in flavour

Add cornflour, garam masala, grated ginger, coriander and salt, then bring it into a smooth, pliable dough. The cornflour binds the soft paneer so the koftas do not crack open in the heat.

  3. Form balls

Roll the dough into smooth round koftas, sealing any surface cracks with a light press of your fingers. A smooth, crack-free surface browns more evenly in the hot air.

  4. Light oil coat

Brush each kofta with a thin layer of oil and set them apart in the basket. The oil coaxes a gentle golden colour while keeping the paneer from drying out as it cooks.

  5. Air-fry and serve

Air-fry at 185C for 11 min, turning once for even colour. Lift them out as soon as the surface turns lightly golden so the koftas stay soft and moist inside rather than drying out.
