Ingredients
- Spring roll wrappers12
- Shredded cabbage2 cups
- Carrot, julienned1 cup
- Ginger-garlic paste1 tbsp
- Soy sauce1 tbsp
- Sesame oil2 tbsp
Method
Stir-fry the filling
Heat a teaspoon of sesame oil and toss the cabbage, carrot and ginger-garlic paste over high heat for two minutes. Splash in the soy sauce and cook just until the vegetables wilt but still snap, then cool them completely. Dry, cool filling keeps the wrappers from turning soggy.
Roll tight
Lay a wrapper as a diamond and spoon a thin line of filling near the corner closest to you. Fold the sides in and roll it into a slim cigar, then seal the last edge with a dab of water-flour paste so it will not unfurl in the basket.
Brush with oil
Lightly brush each roll all over with the remaining sesame oil. This thin, even coat is what gives an air-fried wrapper its deep golden colour and the crackle you expect from deep frying, without the pan of oil.
Air-fry
Arrange the cigars seam-side down with space between them and air-fry at 190°C for 12 min, flipping halfway, until they are evenly golden and crisp. Serve straight away with a sweet chilli dip while they are still crackly.
