Ingredients
- Firm tofu, pressed and cubed400 g
- Thick yoghurt4 tbsp
- Tandoori masala1.5 tbsp
- Ginger-garlic paste1 tbsp
- Bell pepper chunks1 cup
- Mustard oil1 tbsp
Method
Press and cut
Press the tofu firmly, then cut it into large cubes about two and a half centimetres across so they hold up on a skewer. Bigger cubes stay soft and juicy in the middle while the outside chars, whereas small ones dry out fast.
Mix the tikka marinade
Whisk the yoghurt, tandoori masala, ginger-garlic paste and mustard oil into a thick coral-coloured paste. Fold the tofu and bell pepper chunks through it and rest for twenty minutes so the marinade grips and seasons every face.
Thread the skewers
Thread the tofu cubes and bell pepper onto soaked wooden or metal skewers, alternating as you go. Leave a small gap between each piece so the hot air can circulate freely and char every side rather than leaving pale patches.
Air-fry to a char
Lay the skewers in the basket and air-fry at 200°C for 16 min, turning them halfway through. Cook until the edges blister and the marinade dries into smoky dark spots, the sign the tikka has taken on a real tandoor-style char.
