Ingredients
- Baguette slices10
- Ripe tomatoes, diced2
- Garlic clove1
- Fresh basil8 leaves
- Olive oil2 tbsp
- Balsamic vinegar1 tsp
Method
Marinate the tomatoes
Toss the diced tomatoes with torn basil, the balsamic, a little olive oil and salt. Let them sit while the bread toasts; the salt and vinegar pull out the juices and round off the sharpness into a mellow, spoonable topping.
Oil the bread
Brush each baguette slice lightly with olive oil on both sides. A thin, even coat helps the surface crisp up golden all over; too much and the bread goes greasy and heavy instead of light and crunchy.
Garlic rub
Once the slices are toasted and still warm, rub one side of each with the cut garlic clove. The hot, crisp crust melts the garlic into it, leaving a gentle fragrance rather than the harsh punch of raw garlic.
Air-fry
Air-fry the oiled bread at 190°C for 6 min, flipping once, until crisp and golden at the edges. Spoon the marinated tomato onto the garlic side only just before serving, so the bread keeps its crunch and does not turn soggy.
