Ingredients
- Firm tofu, pressed and cubed400 g
- Soy sauce3 tbsp
- Brown sugar1.5 tbsp
- Fresh ginger, grated1 tsp
- Cornflour2 tbsp
- Sesame seeds1 tsp
Method
Press and cube
Press the tofu under a weight for ten minutes to force out as much water as you can, then cut it into even cubes. Dry tofu browns far better in the basket and won't water down the teriyaki glaze when it goes on.
Make teriyaki
Simmer the soy sauce, brown sugar and grated ginger in a small pan until the sugar fully dissolves. Stir in a little cornflour slurry and cook briefly until the sauce thickens to a syrupy coat that clings to each cube rather than sliding off.
Coat and crisp
Dust the tofu cubes in the remaining cornflour, then air-fry them plain at 195°C for ten minutes to firm and set the surface. Shake the basket once halfway so the cubes take on colour on every side, not just the bottom.
Glaze and air-fry
Toss the crisp cubes in the warm teriyaki until thickly and evenly coated, then return them to the basket. Air-fry at 195°C for 6 min until the glaze darkens and clings, and finish with a scatter of sesame seeds.
