Ingredients

  • Boiled green peas, mashed2 cups
  • Boiled potato1 medium
  • Ginger, grated1 tbsp
  • Garam masala1 tsp
  • Bread crumbs3 tbsp

Method

  1. Mash the peas

Lightly mash the boiled peas but leave a few whole for texture. A coarse mash keeps the tikki from turning to smooth paste and holds on to that fresh, sweet green flavour that makes these patties taste of the season.

  2. Season and bind

Mix in the mashed potato, grated ginger, garam masala and bread crumbs. The crumbs soak up the moisture the peas release, giving the mix a firm, sliceable body that shapes cleanly and does not fall apart.

  3. Form patties

Shape the mix into smooth round tikkis of even thickness. Pinch and smooth the edges so they do not crack, because cracks widen in the heat and let the crust break away from the soft centre.

  4. Brush with oil

Lightly coat both sides of each tikki with oil for an even golden finish. Lay them spaced out in the basket so hot air can reach every surface and brown the patties instead of steaming them soft.

  5. Air-fry to set

Air-fry at 190°C for 14 min, turning once midway, until a light golden crust forms and the centre is hot right through. Serve them warm with tangy tamarind chutney.
