Ingredients

  • Grated carrot, beans and peas2 cups
  • Boiled mashed potato3/4 cup
  • Bread crumbs1/2 cup
  • Cumin powder1 tsp
  • Chopped green chilli2 tsp
  • Saltto taste

Method

  1. Soften the veg

Steam or microwave the grated carrot, beans and peas for 2 minutes, then press out the extra water. Softened veg blends smoothly into the dough with no raw crunch, and squeezing it dry keeps the mix firm.

  2. Combine

Mix the vegetables with mashed potato, bread crumbs, cumin, green chilli and salt into a firm dough. If it feels loose, work in a few more crumbs so the balls hold together and do not crack open.

  3. Roll the balls

Shape the dough into even bite-sized balls, pressing firmly so there are no cracks on the surface. Keeping them all the same size means they cook through in the same time.

  4. Spray with oil

Mist every ball with oil and lay them out in a single, uncrowded layer. The oil mist over the crumb coating is what gives a crisp, golden crust all the way around each ball.

  5. Air-fry to crisp

Air-fry at 190C for 13 min, shaking the basket once halfway through so they colour on every side. They are ready when the outsides are crisp and evenly browned all over.
