Ingredients

  • Boiled raw banana, mashed2 cups
  • Boiled potato1 medium
  • Roasted besan3 tbsp
  • Chopped coriander & chilli2 tbsp
  • Coriander-cumin powder1 tsp

Method

  1. Mash the banana

Boil the raw bananas until tender, then peel and mash them smooth while still warm. Warm banana breaks down evenly with no lumps and blends cleanly into the other ingredients, giving the kofta a fine, uniform body.

  2. Make the dough

Combine the mash with the mashed potato, roasted besan, coriander, chilli and coriander-cumin powder. The roasted besan drinks up the banana's moisture and binds the mix so the koftas hold shape instead of spreading.

  3. Roll into koftas

Shape the mixture into smooth oval or round balls with lightly oiled palms so it does not stick. Keep them all the same size, since uniform koftas cook through at the same rate and none stay doughy inside.

  4. Coat with oil

Brush the koftas all over with a thin coat of oil for a crisp, golden shell. Arrange them spaced apart in the basket so the hot air can brown each one instead of letting them steam and stick together.

  5. Air-fry till golden

Air-fry at 195°C for 14 min, rolling them once midway for even colour, until firm and golden all over. Serve them as they are with chutney, or simmer them into a tomato gravy.
