Ingredients
- chicken wings500 g
- yogurt2 tbsp
- red chilli powder1 tsp
- ginger garlic paste1 tsp
- saltto taste
Method
Marinate the wings
Mix the yogurt, red chilli powder, ginger garlic paste and a good pinch of salt into a thick paste, then rub it over every wing. The yogurt gently tenderises the meat and helps the spices grip so the flavour soaks right in.
Rest the wings
Cover the bowl and leave the wings in the fridge for 20 min. A cold rest lets the marinade work its way into the meat and keeps the chicken safe, so hold off on shortcutting this wait.
Arrange in the basket
Lay the wings skin-side up in a single layer with a clear gap around each piece. Crowding traps steam and leaves them pale and soft, while space lets the hot air crisp every side.
First fry
Air fry the wings at 200°C for 12 min, then turn each piece over. Flipping halfway exposes the underside to the hot air so both sides brown evenly instead of one side staying soggy.
Finish cooking
Air fry at 200°C for 10 min until the wings reach 74°C inside and the juices run clear with no pink at the bone. That inside check is the sure sign they are safe and fully cooked.
