Ingredients
- Fresh jalapenos10
- Cream cheese200 g
- Grated cheddar1/2 cup
- Bacon strips10 half-strips
- Smoked paprika1 tsp
- Garlic powder1/2 tsp
Method
Prep the peppers
Halve each jalapeno lengthwise and scoop out the seeds and white membrane with a small spoon. Removing the membrane tames most of the heat while leaving plenty of flavor in the flesh.
Mix the filling
Blend the cream cheese with cheddar, smoked paprika and garlic powder until smooth and spreadable. Taste and adjust the smokiness so it complements rather than overpowers the pepper.
Fill generously
Pack each pepper half with the cheese mixture, mounding it slightly so it bubbles attractively as it cooks. Wipe any spillover off the edges so it doesn't burn.
Wrap in bacon
Wrap a half-strip of bacon around each stuffed pepper, tucking the end underneath so it stays put. The bacon bastes the filling and crisps into a salty shell.
Air-fry to crisp
Cook at 190C for 9 minutes until the bacon is crisp and the cheese is golden and bubbling at the surface. The pork is done when it is cooked through with no pink in the centre.
