Ingredients
- Medjool dates12
- Streaky bacon6 rashers
- Goat cheese1/3 cup
- Toasted almonds12
- Black pepper1/2 tsp
Method
Pit the dates
Slit each date along one side and lift out the pit, keeping the date whole. A clean pocket gives you room for the filling.
Stuff with cheese
Tuck a little goat cheese and a toasted almond into each date, then pinch it closed. The creamy tang plays against the date's caramel sweetness.
Wrap in bacon
Cut each rasher in half and wind it snugly around a date, ending seam-side down. Wrapping tightly stops the bacon unravelling in the basket.
Season the tops
Give the wrapped dates a crack of black pepper for a savoury edge. No salt is needed since the bacon brings plenty.
Arrange seam down
Set them seam-side down and spaced apart so the bacon crisps all around. Crowding traps steam and leaves the bacon flabby.
Air-fry until crisp
Air-fry at 200C for 9 minutes, turning once, until the bacon is deeply crisp and the dates are warmed through. Cool a minute before serving. The pork is done when it is cooked through with no pink in the centre.
