Ingredients
- Potatoes3 large
- Cornflour1 tbsp
- Chaat masala1 tsp
- Red chilli powder1/2 tsp
- Oil1 tbsp
- Saltto taste
Method
Cut and soak
Peel the potatoes and slice them into even matchsticks about a centimetre thick so they cook uniformly. Drop them into a bowl of cold water and let them soak for fifteen minutes to draw out excess starch, which is the secret to a crisp exterior.
Blanch briefly
Drain the soaked fries and parboil them in salted water for three to four minutes until just slightly tender at the edges. Spread them on a clean kitchen towel and pat them completely dry, as any surface moisture will steam rather than crisp.
Coat and season
Toss the dried fries with cornflour first so they get a light dusting that helps form a shell. Drizzle the oil and rub it in evenly, keeping the chaat masala aside to sprinkle only after frying so it does not scorch.
Air-fry to golden
Arrange the fries in a single layer in the basket without crowding and air-fry at 200C for 18 minutes, shaking the basket twice midway for even browning. Once crisp and golden, tip them into a bowl, dust with the chaat masala and chilli powder, and toss while hot.
