Ingredients
- peanuts2 cups raw
- olive oil2 tsp
- chilli powder1/2 tsp
- salt1/2 tsp
Method
Coat the peanuts
Toss the raw peanuts with the olive oil, chilli powder and salt so the spice sticks evenly. The thin coat of oil helps the chilli and salt cling to each nut and roast on, instead of falling to the bottom of the basket.
Spread out
Spread the peanuts in a single layer in the basket for even roasting. A crowded pile traps steam and roasts unevenly, while a flat layer lets the hot air reach every nut so they turn out uniformly crunchy.
Shake often
Plan to shake the basket a few times during cooking so the peanuts colour on all sides. Peanuts sitting still will darken on one face and stay pale on the other, so regular shaking keeps them evenly roasted.
Roast until crunchy
Roast at 160°C for 12 min, shaking 2 or 3 times, until the peanuts are dry and crunchy. Keep the heat low so they roast through without scorching, and remember they crisp up a little more as they cool.
