Ingredients
- okra300 g, sliced lengthwise
- olive oil1.5 tbsp
- turmeric1/2 tsp
- red chilli powder3/4 tsp
- amchur powder1/2 tsp
- salt1/2 tsp
Method
Dry the okra
Wash the okra, then dry it fully with a towel before slicing each one lengthwise into thin strips. Any water makes okra slimy and soft, so dry okra is the key to crisp, non-sticky results.
Season
Toss the strips with the olive oil, turmeric, red chilli powder, amchur and salt. The oil helps the spices stick and coats each strip so it crisps evenly instead of drying out in patches.
Spread out
Lay the strips in a single layer so hot air reaches every piece. Piling okra up traps steam and brings back the sliminess, while a loose layer keeps each strip firm and crisp.
Preheat
Preheat the air fryer to 190°C for 3 minutes. A hot basket starts drying the strips the moment they go in, which helps them crisp fast rather than turning soft and sticky.
Roast
Air fry at 190°C for 13 min, shaking the basket twice, until the okra strips are crisp with no sliminess left at all and lightly browned all over the edges.
