Diwali Suran Fry (Jimikand)
Crisp, spiced elephant foot yam cubes, the dish many UP and Bihar homes cook on Diwali for the Lakshmi puja meal. This is an air-fried version of suran, not the gravy many families make.

Ingredients
- Yam (elephant foot yam / suran), peeled and cubed500 g
- Tamarind, paste1 tbsp
- Mustard oil1.5 tbsp
- Turmeric1/2 tsp
- Red chilli powder1 tsp
- Coriander powder1 tsp
- Amchur1 tsp
- Saltto taste
Method
Peel with care
Oil your hands or wear gloves before handling raw suran, as it can make your skin itch. Peel off the thick skin and cut the yam into 2 cm cubes. Rinse the cubes well.
Boil with tamarind
Boil the cubes in water with the tamarind paste and a teaspoon of salt for 10 to 12 minutes, until a knife goes in easily. Boiling with tamarind removes the itchy feel in the mouth, so do not skip it.
Drain and dry
Drain the cubes and spread them on a towel for 10 minutes to steam dry. Dry cubes crisp up; wet cubes go soft.
Season
Toss the cubes with mustard oil, turmeric, chilli powder, coriander powder and salt until evenly coated.
Air-fry crisp
Spread the cubes in one layer in the basket. Air-fry at 200°C for 16 min, shaking twice, until the edges are deep golden and crisp. Sprinkle the amchur over the hot cubes, toss and serve with dal and puri.
