Ingredients

  • macaroni1 cup
  • cheese1/2 cup
  • cornflour3 tbsp
  • breadcrumbs1 cup
  • salt1/4 tsp

Method

  1. Mix the macaroni

In a bowl, mix the cooked macaroni with grated cheese, cornflour and salt until it all clumps and sticks together. The cornflour and melting cheese act as glue, binding the soft pasta so your bites hold their shape.

  2. Shape into bites

Scoop small portions and press each firmly into a little ball. Pressing out the air pockets is key, as loosely packed bites tend to crack open and spill their soft centre once the heat hits them.

  3. Coat and chill

Roll each ball in the breadcrumbs to cover it all over, then freeze for 15 min. Chilling firms up the soft insides so the bites keep their round shape and the crust crisps before the middle can ooze out.

  4. Air fry until golden

Air fry the bites at 180°C for 8 min, shaking the basket halfway so they brown on all sides. They are ready when the crumb coat is golden and firm to the touch and holds together when lifted.
